Summary

Facilitate bar service.


Responsibilities

Prepare alcohol or non-alcohol beverages

Interact with customers, take orders and serve snacks and drinks

Assess customers needs and preferences and make recommendations

Mix ingredients to prepare cocktails

Check customer's identification and confirm it meets the legal drinking age

Restock and replenish bar inventory and supplies

Stay guest focused and nurture an excellent guest experience

Comply with all food and beverage regulations


Knowledge

Customer and Personal Service — Knowledge of principles and processes for providing customer and personal services. This includes customer needs assessment, meeting quality standards for services, and evaluation of customer satisfaction.

English Language — Knowledge of the structure and content of the English language including the meaning and spelling of words, rules of composition, and grammar.


Skills

Knowledge of a second language will be considered a plus 

Knowledge of POS SYSTEMS

Knowledge of inventory systems, procedures.

Positive attitude and excellent communication skills • Ability to keep the bar organized, stocked and clean • Relevant training certificate

CHEF B- HIGH VOLUME KITCHEN (Manage Kitchen staff of 15)

SUMMARY

HIGH VOLUME RESTAURANT - Prepare, season, and cook dishes such as soups, meats, vegetables, or desserts in restaurants. May order supplies, keep records and accounts, price items on the menu, and/or plan menus, event menus.


ESSENTIAL DUTIES AND RESPONSIBILITIES:

Includes the following…. other duties may be assigned.

  • Ensures that high standards of sanitation, cleanliness, and safety are maintained throughout all kitchen areas at all times and oversee appropriate cleaning schedules for cleaning of kitchen floors, mats, walls, hoods, other equipment and food storage areas.
  • Make employment and termination recommendations consistent with VP Operations and Executive VP of Operation’s approval.
  • Interacts with food and beverage management to assure that food production consistently exceeds the expectations of members and guests.
  • In conjunction with the management team, assist in maintaining a high level of service principles in accordance with established standards.
  • Establishes controls to minimize food and supply waste and theft.
  • Attends food and beverage staff meetings.
  • Planning and directing food preparation.
  • Supervise, direct and assist staff as they prep for lunch and dinner shift.
  • Ensures proper staffing for maximum productivity and high standards of quality; controls food and payroll costs to achieve maximum profitability.
  • Check the main items for dinner service and make sure they are ready for use.
  • If something is missing, take care of the problem immediately.
  • Must make sure that all staff adheres to the guidelines of their perspective jobs.
  • Monitor the cleanliness of each station; make sure that they maintain their work areas.
  • Maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment.
  • Maintain and encourage respect between kitchen and front of the house.
  • Coordinate with operations manager to communicate 86's, specials and end of the night checkout.
  • Must inspect every plate for proper seasoning, temperature and neatness before it leaves the kitchen.
  • Help clean, consolidate and organize all coolers and freezers as directed by EC.
  • Oversee the training of kitchen personnel in the safe operation of all kitchen equipment and utensils.
  • Responsible for training kitchen personnel in cleanliness and sanitation practices.
  • Check and maintain proper food holding and refrigeration temperature control points.
  • Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes, and waste control procedures.
  • Handles of food Inspections by the Department of Health.
  • Support safe work habits and a safe working environment at all times.
  • Perform other duties as directed.

QUALIFICATIONS

EDUCATION & EXPERIENCE: 

3+ years of HIGH Volume kitchen (500 to 1,000 covers per day)

5+ years of previous culinary management experience

Ability and experience managing several BOH outlets

Strong people management (Scheduling and Hiring)

Inventory, and purchasing experience

Strong/stable work history

Availability to work a flexible schedule (6 days a week) 60~ 70 hours


LANGUAGES:

ENGLISH - FLUENT

SPANISH - CONVERSATIONAL

Ability to read and interpret documents in English such as safety rules, operating and maintenance instructions, and procedure manuals.

Kitchen Staff - Salad Maker

Full-time

Our busy south beach restaurant is looking for a professional Salad station that can help prepare salads and desserts as per our standard recipes. The successful candidate will be responsible for prepping portions, cleaning food, and keeping a sanitized work area. We are seeking an individual who has at least 1-year experience & can perform multiple tasks in a fast-paced environment.

Responsibilities & Duties:

  • Prepare basic components of each dish on our menu using our proven recipes for salad & dessert Station.
  • Memorize and utilize our serving portion sizes and all basic meal prep procedures used in the kitchen.
  • Work with a team of cooks to do portion prep work for other shifts when needed.
  • Monitor product freshness and rotate out old product based on a schedule created by the restaurant.
  • Knowledge and/or the ability of making salad dressings is a plus.

Qualifications & Skills:

  • Minimum 1-year kitchen experience.
  • Ability to work on your feet for eight hours or more a day.
  • Comfortable working with a team in a fast-paced kitchen environment.
  • Must be able to lift at least 20 pounds at a time on a regular basis.
  • This position is very active while performing the duties of this job, standing, walking, bending, kneeling & stooping is required.

Line Cook

  • Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment.
  • Assumes 100% responsibility for the quality of products served.
  • Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies, and procedures.
  • Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
  • Portions food products prior to cooking according to standard portion sizes and recipe specifications.
  • Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range, and refrigeration equipment.
  • Prepares item for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and/or marinating.
  • Follows proper plate presentation and garnish set up for all dishes.
  • Handles, and rotates all products properly.
  • Assists in food prep assignments during off-peak periods as needed.
  • Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.
  • Attends all scheduled employee meetings and brings suggestions for improvement.
  • Performs other related duties as assigned by the Kitchen Manager or manager-on-duty.
